Canning for a New Generation

I’ve been reading and re-reading Canning for a New Generation over the past few weeks and I’m really excited to dig into my first canning project this week. I’m thinking Spiced Apple Butter and Red Onion Marmalade to begin.

What’s so great about this book is it clearly explains the basics of canning without being overly complicated. All the recipes are for high-acid foods, and the author walks the reader through, step-by-step, explaining how the book’s recipes inhibit the growth of microorganisms that spoil food.

Tell me, Friends, do you have experience canning? Any advice you would like to share?
