Frames from Our Weekend

by Landis Carey on August 1, 2011

What a yummy weekend. Yes, I did say yummy! I’ve been so inspired in recent weeks to prepare simple recipes perfect for summer. I’m not sure what’s driving this activity; don’t get me wrong, I love to cook! But when I’m as busy as I am—like in recent weeks—I sometimes shy away from it.

I’ve been making a conscious effort to thoroughly clean the kitchen and put everything away each night before bed as well as clean out the refrigerator every few days. I’m not always so consistent about this, but I recently read that the routine of cleaning your kitchen and refrigerator—the later is my least favorite chore—promotes a healthy environment as you put energy and care into your home. It’s this healthy practice that I believe is spurring my inner cook when I could so easily claim to be too busy for homemade whole wheat chapati.

What’s so great about cooking in the summer is all the fresh ingredients. And I’m not talking complicated here: balled watermelon can provide an endless number of meals. Sprinkle feta on top for a savory lunch or add mint for a refreshing desert. Cut a few sprigs of rosemary from your garden for your baked chicken and all you need is olive oil and pepper.

Whether it’s all the energy and love I’ve been putting into our kitchen or the wonderful, simple ingredients at hand, I’m a happy cook right now. All the summer fruits are making this hot weather worth it!

Our weekend was filled with all sorts of culinary yumminess: fresh cherries, homemade whole wheat chapati bread, rosemary chicken, balled watermelon, gingered salmon and a simple salad made only of tomato, avocado, red onion, corn and fresh-squeezed lime juice. Oh my goodness, that salad is to die for!

We spent most of the weekend at home, enjoying our space as we worked on various projects and prepared for our upcoming travels. On Saturday I spent the morning with Kimberly Lewis of Kimberly Lewis Home. I photographed her apartment for an Apartment Therapy Home Tour. She’s absolutely adorable and her wall coverings are killer!

Another, and I promise my last, bit of news for the morning: remember that super secret project I’ve been mentioning, the one I’m working on for Apartment Therapy? Well, it launched this morning. It’s called The Color Cure and it’s a month-long program all about color. I know some of you who might love this!

I hope everyone had a wonderful weekend full of healthy foods and fun cooking! What’s on the agenda for the week?

Hi, Chelsea, welcome to Mint Peach :) By the way, I’m surprised my hands didn’t still smell like rosemary yesterday, it’s so potent!
